Once again it’s holiday baking season and once again, I am on the hunt for easy Christmas cookies! Why is is that life moves at such a speed that it’s impossible to ever feel caught up and on the ball?

These crock pot chocolate almond clusters will make you feel like you saved the day – because they are seriously so easy but yet decadent. Not only are they simple, but they dry perfectly for stacking and then gifting, or for sticking away in the freezer to pull out for unexpected guests.

Crock Pot Almond Clusters

This time of year is crazy, not only with the added shopping, wrapping, and work, but our son also plays basketball and we are so blessed for him to be on a team that travels a little bit, so many of the weekends are spent in gymnasiums across Iowa. I wouldn’t want it any other way, but I will say that this adds a whole new dimension to trying to get a little less overwhelm during the holidays.

So, when I can premake any sweets, I am all over it and will gladly take on getting that all done ahead of time. And these almond clusters definitely fit in with my plans to get all of this done.

Before I show you how all of this gets done, I wanted to make sure and also point you to my wildly popular Crockpot Peanut Clusters recipe. These are also so dang good, for real!

Here’s how I prepare the almond clusters:

Gather my ingredients:

  • 24 ounces raw almonds
    4 ounces German chocolate bar
    12 ounce bag semisweet chocolate chips
    20 ounces white almond bark

The Instructions that I recommend are pretty particular, only to prevent burning the chocolate.

  • Add all ingredients to slow cooker in the order listed above.
    Place a paper towel over the crockpot and place the lid on top of the crock pot.
    Let cook on low for 1 hour (no peeking!)
    After an hour, stir to combine everything.
    Put the paper towel back on top of the crockpot and replace the lid.
    Allow to cook for 15 more minutes.
    Drop spoonfuls of the candy onto parchment paper and allow to cool completely.

There are a few things that are of note with this chocolate candy recipe. The first is that a tablespoon scoop is recommended for scooping the clusters out onto the parchment paper, and depending on the temperature of your room, the dry time could take 2-3 hours.

The last things is that the placing of the paper towels under the slow cooker lid is really important. If you’ve ever made chocolate clusters, then you know that there cannot be any condensation in the chocolate mix or you’ll have lumpy chocolate and your clusters will not be pretty.

Total Time 1 hour 25 minutes

** The placing of the paper towels under the slow cooker lid is also really important. There cannot be any condensation in the chocolate mix or you’ll have lumpy chocolate. But the paper towels will 100% solve that problem. I have the select a size paper towels and I use two layers of three of the half sheets connected when I make this crockpot chocolate peanut cluster recipe.
