I am all about crockpot candy! The holidays are alway crazy for us and easy desserts are what I usually turn to. Unfortunately we’re short on time, and being tugged in every direction, but that doesn’t mean that we have to sacrifice flavor.
Chocolate covered cashew clusters are delicious and even kids love them. I mean, if the kids are going to eat Christmas cookies, might as well have something healthy(er) mixed into them, right?
Delicious Crock Pot Chocolate Covered Cashews!
Guy, guys, guys. This year has been cra-zy to say the least. It’s been eye-opening, full of welcome (and unwelcome) surprises (insert health issues for family members here) So, getting any holiday baking done has gone to the wayside and I find myself even more thankful that my crockpot can be used to help me out in the kitchen. For real – it’s life changing when you can have three recipes going at the same time.
Just last week I had three slow cookers multitasking making crockpot peanut clusters, crock pot almond clusters and these cashew chocolate clusters as well.
So, depending on the type of nut that your family and friends prefer, you can have them ready. And, one of my favorite parts of these is that once they set up and are dry you can freeze them to be taken out of the freezer as needed. When you’re ready to serve them, they defrost perfectly and no one would even know that they were in the freezer in the first place if you store them in gallon freezer bags and they’re all the way dry before you put them in the freezer.
OK, enough, enough about how amazing these really are, more about how to get these done:
Crock Pot Chocolate Covered Cashew Clusters
Even kids love these chocolate covered cashew clusters! I mean, if the kids are going to eat Christmas cookies, might as well have some easy Christmas treats to mix up right??

ounces
cashew halves -
4
ounces
German chocolate bar -
12
ounce
bag semisweet chocolate chips -
20
ounces
white almond bark

Add ingredients in order above to a crockpot larger than 4 quarts. N

Place the crock pot on low, lay a paper towel over the top of the crock pot and turn the slow cooker on for 1 hour.

After cooking for 1 hour, give it a quick stir and place on low for 15-30 minutes more being careful to still have the paper towel laid over the top.

Once the time is up use a dry tablespoon or 1/4 cup measuring cup to pour clusters onto parchment paper.

Give the clusters 2-3 hours to dry and serve or freeze to serve later.

12 ounce bag semisweet chocolate chips

** A tablespoon scoop is recommended for scooping the clusters.
** The placing of the paper towels under the slow cooker lid is also really important. There cannot be any condensation allowed in the chocolate mix or you’ll have lumpy and hard chocolate.
